Chipotle Raises Prices: 3 Simple Burrito Recipes For One

Chicken Burrito

  • ¼ pound cooked boneless chicken breast or thighs
  • ¼ medium yellow onion
  • ¼ medium red bell pepper
  • ½ of a garlic clove
  • ¼ of a medium lime
  • 1 sprig of fresh cilantro
  • ¼ can of pinto beans
  • ¼ cup warm cooked white rice
  • 1/8 teaspoon kosher salt
  • ¼ teaspoon vegetable oil
  • ¼ teaspoon taco seasoning (homemade or store-bought)
  • ¼ cup shredded cheese of choice or Mexican blend cheese
  • 1 large flour tortilla
  • 1 tablespoon sour cream
  • 1 tablespoon guacamole
  • 3 tablespoons jarred salsa

Instructions

  1. You can chop, shred, or dice the chicken breast or thigh. Measure one-quarter pound of chicken on a kitchen scale.
  2. Trim and cut a quarter of the onion and bell pepper. Mince the ½ clove of garlic. Finely grate the zest of ¼ of a medium lime. Juice a quarter of the lime. Chop the one sprig of fresh cilantro. Drain, rinse, and measure out a quarter can of pinto beans.
  3. Place the lime zest, cilantro, lime juice, ¼ cup of cooked warm rice, and 1/8 teaspoon kosher salt into a small bow. Stir and combine ingredients in the bow.
  4. Heat ¼ teaspoon vegetable oil in a large skillet on medium-high. Let the vegetable oil simmer. Add your onion and bell pepper. Sauté until the onion and bell pepper are golden brown and tender, about four to five minutes. Transfer the ingredients to a plate.
  5. Return the large skillet to the stovetop. Reduce the heat to medium-low. Add your beans, garlic, chicken; use any remaining lime juice, ¼ teaspoon taco seasoning, and 3 tablespoons of salsa. Simmer in pan until the liquid evaporates, and the ingredients are entirely heated through. One to two minutes. Now, remove the pan from the stovetop.
  6. Set one large flour tortilla on a microwave-safe plate. Cover with a slightly damp paper towel. Heat up in the microwave until warm, roughly thirty seconds.
  7. Now, dress your tortilla. Layer your ¼ cup of shredded or Mexican cheese, ¼ cup warm white rice, ¼ pound of chicken breast or thigh, place ¼ yellow onion and bell pepper, 1 tablespoon of sour cream and 1 tablespoon guacamole, and 1 tablespoon of salsa across the warm tortilla. Add more toppings as desired. Fold the burrito in half. It is now ready to serve!
