  • ¼ can of pinto beans
  • ¼ cup warm cooked white rice
  • 1/8 teaspoon kosher salt

  • ¼ cup shredded cheese of choice or Mexican blend cheese
  • 1 large flour tortilla

Instructions

  1. You can chop, shred, or dice the chicken breast or thigh. Measure one-quarter pound of chicken on a kitchen scale.
  2. Trim and cut a quarter of the onion and bell pepper. Mince the ½ clove of garlic. Finely grate the zest of ¼ of a medium lime. Juice a quarter of the lime. Chop the one sprig of fresh cilantro. Drain, rinse, and measure out a quarter can of pinto beans.
  3. Place the lime zest, cilantro, lime juice, ¼ cup of cooked warm rice, and 1/8 teaspoon kosher salt into a small bow. Stir and combine ingredients in the bow.

  • ½ cup softened butter
  • ½ clove garlic, minced
  • ½ teaspoon paprika
  • ½ teaspoon
  • Italian seasoning
  • ¼ teaspoon salt-free garlic and herb seasoning blend (such as Dash®)
  • Salt and ground pepper to taste
  • 1 turkey breast with skin
  • ½ teaspoon minced shallot
  • ½ tablespoon butter
  • 1 splash of dry white wine
  • ½ cup chicken stock
  • 5 tablespoons all-purpose flour
  • 1 tablespoon half-and-half (optional)

 

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix 1/4 cup butter, garlic, paprika, Italian seasoning, garlic and herb seasoning, salt, and black pepper in a bowl. Place turkey breast with skin side up into a roasting pan. Loosen the skin with your fingers; brush half the butter mixture over the turkey breast and underneath the skin. Reserve the remaining butter mixture. Tent turkey breast loosely with aluminum foil.
  3. Roast in the preheated oven for 1 hour; baste the turkey breast with the remaining butter mixture. Return to oven and roast until the juices run clear, and an instant-read meat thermometer inserted into the thickest part of the breast, not touching bone, reads 165 degrees F (65 degrees C), about 30 more minutes. Let turkey breast rest for 10 to 15 minutes before serving.
  4. While the turkey is resting, transfer the pan drippings to a skillet. Skim off excess grease, leaving about 1 tablespoon in the skillet. Place skillet over low heat; cook and stir shallot in turkey grease until opaque, about 5 minutes.
  5. Melt 1 tablespoon butter in a skillet with shallot and whisk in white wine, scraping any browned bits of food from the skillet. Whisk in chicken stock and flour until smooth. Bring to a simmer, constantly whisking, until thickened. For a creamier, lighter gravy, whisk in half-and-half.
  6. Roast until an instant-read thermometer inserted into the breast meat reaches 165 degrees F (74 degrees C), about 1 hour. Cooking time may vary depending on the size of your turkey breast.

Ingredients

  • 1 celery stalk, cut into thirds
  • 1 turkey leg
  • 2 tablespoons of butter
  • Salt to taste
  • ¼ cup of water, or as needed

Directions 

  1. Preheat the oven to 350 degrees F (175 degrees C). Rinse the turkey legs and pat dry.
  2. Stand the turkey legs upright (as if the turkey were standing). Press a knife down into the deep tissue, creating 2 or 3 long pockets. Press a piece of celery into each opening. Pull back the skin on the legs, rub it with butter, and season with a bit of salt. Put the skin back into place, rub with more butter, and season lightly with salt. Lay the turkey legs in a roasting pan.
  3. Roast uncovered for 1 1/2 to 2 hours until the legs are golden brown and the internal temperature is 180 degrees F (82 degrees C) when taken with a meat thermometer. Add more water if needed while roasting, and occasionally baste with the juices or butter.

Grocery shopping single can be difficult. Produce and packaged foods typically are sold in family sizes, although there more individual servings of rice and sides becoming available as food companies begin to recognize that Millennials are staying single longer. Food waste is a problem, not just for singles but for the average American, as the National Resources Defense Council found that the Americans throw out $28 to $43 worth of uneaten food each month. Singles should make sure to pick up what they need at the grocery store on their weekly or bi-weekly shopping trip. Be organized, shop smart, and use a shopping list app. Here’s a guide for grocery shopping as a single and how to shop  for one the next time you go to the store.

 

Vegetables

Fresh vegetables can be used for snacking or for cooking. Baby carrots, Persian cucumbers, and bell peppers are a good choices as they are sold individually and easy to eat. Fresh vegetables that work for cooking include medium onions, garlic, fresh herbs, and avocados. Vegetables can be difficult to eat before they rot. For this reason, consider getting frozen vegetables. It has been found that frozen vegetables are actually more nutritious than fresh vegetables. You can buy mixed vegetables along with other popular vegetables in the frozen aisle. The portions are generally better for one person compared to buying fresh vegetables.

Fruit

For fruit, it is best to buy fruits that can be purchased according to the number that you will eat for that week. Meat

Meat can be tricky to estimate because it is purchased by pounds. Plan meals around six ounces increments now double that according to the number of meals that you plan to eat the meat that you buy. Two pounds, or 32 ounces, will be about six meals depending on how big of an eater you are. Stores will typically have some pre-cut fish, pork, or beef around the meat section.
